Turkey Roasting Tip: #1

When I roast my turkey on Thanksgiving morning, I use cheesecloth to cover the turkey instead of aluminum foil.

Roasting your turkey directions:
  1. Wash and clean your turkey
  2. Don't forget to take out the giblets from both cavities of the turkey
  3. Season inside of turkey with generous amount of salt + pepper
  4. Can stuff your turkey with bread crumb mix OR stuff with sliced oranges and sliced lemons
  5. Place turkey on a bed of onions, carrots and celery
  6. Cover veggies with chicken broth
  7. Soak cheesecloth in chicken broth before placing on turkey
  8. Season skin of turkey with salt, pepper, EVOO and butter
  9. Spray turkey skin with Pam so that the cheesecloth doesn't stick
  10. Cover turkey with cheesecloth
  11. Place in roasting pan
  12. Base turkey every hour, after you base, pull cheesecloth away from turkey skin so it doesn't bake into the turkey
  13. Bake according to chart below
  14. Make sure you have a meat thermometer so you don't over-cook your turkey!

 Internal temp = 165 degrees F
 Here are the benefits to cheesecloth:
  • Can baste right on the cheesecloth
  • Makes a dark, crisp turkey skin
  • Turkey comes out moist not dry!
